  • Windset Farms® Roasted Red Pepper Stuffed Turkey Breast

     

    Ingredients Turkey
    • 1 turkey breast (approximately 2 lbs.)
    • ½ cup red Maestro® Sweet Bell Peppers, roasted and puréed
    • ½ cup soft goat cheese
    • 1 tbsp fresh thyme
    • Kosher salt and black pepper
    Ingredients Vinaigrette
    • 2 cups canola oil
    • 1 cup red wine vinegar
    • ½ cup red Maestro® Sweet Bell Peppers, roasted and puréed
    • 2 Tbsp fresh Italian parsley

     

     

     


  • Instructions
    Turkey
    1. Preheat oven to 375ºF.
    2. Slice turkey breast open to create a pocket.
    3. Spread goat cheese and pepper purée into the pocket. Season with salt and pepper and sprinkle with fresh thyme.
    4. Roll up and tie the turkey, place on lined tray.
    5. Roast for 30 minutes.

    Vinaigrette

    1. Purée all ingredients in a blender until combined.
    2. Season with salt and pepper. Pour over top of the roasted turkey breast. Slice to serve and enjoy.
